Recipe: Lemon Bars

Here is one of my personal faves.

Lemon Bars:

Ingredients:

Crust:

2 cups of sifted all-purpose flour

1 cup of powdered sugar

1 cup of butter, melted

Lemon topping:

4 eggs

2 cups of white sugar

1 tsp of baking powder

1/4 cup of all-purpose flour

3/4 cup of lemon juice

Directions:

1. Preheat the oven to 350 degrees. Grease a 9X13 pan.

2. In a medium bowl stir in the 2 cups of flour and the powdered sugar. Blend in the melted butter. Press into the bottom of prepared pan. Bake in the oven for 15 minutes, or until golden.

3. In a large bowl, beat the eggs until light. Combine the sugar, baking powder, and 1/4 cup of flour so there are no lumps. Stir the sugar mixture into the eggs. Finally stir in the lemon juice.

4. Pour over prepared crust and return to oven. Bake for 30 minutes or until bars are set. Allow to cool completely before cutting into bars.
